In my observation, feelings of integrity blossom when your actions match your intentions.

 

Don’t be swept around by circumstances. Yes, there is much you can’t control in your life. But you can control your actions. You can control your thoughts.

 

Why does it feel so bad when you “blow” your diet? Because you know, darn good and well that your diet... what you put in your mouth ... is the one thing that you have complete control over.

 

Why does it feel so empowering when you make a plan and stick with it?One word: Integrity.

Hungry Girl is the queen of low-cal treats (but with absolutely no regard for nutrition.)

No. That’s not the way it works. Sometimes a really very healthy diet can be a weight-gaining diet and sometimes you can eat lots of really low calorie food and not be getting much in the way of nutrition.

 

In light of the fact that most of us do not have the perfect diet -- where we are eating the lowest calories for the most nutrients 100 percent of the time --I see room for this book on some of your shelves.

 

So if you are a nutrition purist, totally skip this book. But if on the way to a healthier diet, you want to know how you can satisfy your sweet tooth and don’t mind Splenda... you will probably love this book.

 

Note the title ... it does not say “cookbook,” it’s a “recipe” book. You could hardly call mixing packages of this and containers of that cooking. But again, most of us aren’t “eating clean” 100% of the time, and if you are indulging, perhaps a gooey cinnamon rolls with cream cheese icing at 126 calories will be just the ticket.

Did you know that It matters whether you like your food?

A study was conducted in which women from Thailand and Sweden were given diets that had equal amounts of iron. At separate times they were given meals from their own culture (which were appealing to them), from the other culture (which were less appealing to them) and a blended-up mush (which was appealing to neither group).

When given a typical Thai meal, the Thai women absorbed almost 50 percent more of the dish's iron than the Swedes, who ''liked the meal" up to a point, reported the researchers, ''but considered it very spicy."

 

The investigators also discovered that when the same meal was fed to the Thai women after it had been blended together and turned into an unfamiliar and unpalatable paste, their absorption of iron from the meal decreased by 70 percent.

 

Apparently, if you don't like the way your food looks or tastes, your brain might not be as apt to get your digestive ''juices" flowing as freely, and that could hinder digestion and subsequent absorption of various nutrients, according to Robert Russell, a gastroenterologist at Tufts who heads the USDA Human Nutrition Research Center there.

Ready to ride - 2008 bike vacation.

Get on your bike and ride!

 

My friend Cope (yes, Copenhaver is her given name) is a beautiful 60ish year old woman who rides her bike to work. All year. In Illinois. At least 3 miles each way. Impressive. I’m not nearly so dedicated, but I’m doing better. Do you want to increase your bike usage?

By the way I just scheduled my sixth annual week-long bike vacation. This year my husband and I are going to try to ride to Kentucky and back in a week during the last week of August. I’ll keep you updated. (Note: I remember clearly when I couldn’t ride 5 miles without being totally exhausted. Our bike vacations are now 500+ in 7 days!)

What is the best substitute for cream?

Here is a really quick tip for those who are wanting to be their own recipe doctor when cooking with cream.

In baking and some cooking you really can’t just substitute skim milk for cream because of the difference in consistency. But because canned evaporated milk has had the water removed from it – it works as a substitute in a one-to-one ratio.



Here are the calorie comparisons for 1 cup of each.

heavy cream = 821

light cream = 468

evaporated skim milk = 280

evaporated fat free milk = 200
