Parsnips

Are you looking for a new veggie to try, but afraid you wouldn’t know what to do with … parsnips? Parsnips are root vegetables with a sweet earthy flavor. Like other root veggies, they offer an array of nutrients, and their low glycemic load prevents spikes in blood sugar. You’ll like them roasted, perhaps with other root vegetables or even Brussels sprouts or green beans. Simply cut your vegetables into bite size pieces, toss them with olive oil, season with fresh or dried herbs to taste, and roast at 400 degrees until tender and browned.

Look for parsnips now as they peak from November through March. Choose vegetables that are smooth-skinned and heavy for their size. Sometimes parsnips are covered with a wax coating to extend storage; the wax is easily removable by peeling with your fingers and a table knife.
